Fried Taquitos

A last minute shake up to last night’s dinner was a hit. For Taco Tuesday I usually try to make something Mexican inspired. The plan was to let everyone build their own soft taco / burrito. I got a wild hair and deep fried them, turning ordinary burritos into Fried Taquitos.

I had seasoned ground beef and seasoned chicken, so I let everyone choose their meat filling. It was fun. The girls chose to have one Taquito and one burrito. They were very full.

The Hubs and I chose to have only Fried Taquitos. We were equally as full as the girls. I am delighted that the idea popped into my head. It was a fun departure without much additional effort.

In the past I have made baked Taquitos, using corn tortillas. These were made with flour tortillas, which puffed slightly, like a taco bowl. That one difference in ingredients significantly changed the game. The light, puffy tortilla was wonderful!

When I make these in the future I will consider adding a bit of cream cheese to the mixture. Even with salsa inside the insides were a bit dry.

Fried Taquitos

  • Vegetable oil (for frying)
  • Seasoned Taco Meat (shredded chicken or ground beef)
  • 1 cup Cheddar cheese (shredded)
  • 1/2 cup chunky prepared salsa
  • Eight 6-inch flour tortillas
  • 8 to othpicks
  1. Add enough oil to a heavy bottom pan, about 2 inches. Heat over medium heat to 350 degrees F,
  2. Combine seasoned taco meat (ground beef or shredded chicken), cheese, and salsa, in a medium bowl. Place about ¼ cup of the mixture into the center of each tortilla. Roll the tortillas tightly around the filling and secure with a toothpick.
  3. When the oil has come to temperature place the one or two taquitos in the hot oil and fry, flipping as needed to brown evenly, until crispy and golden brown, about 3 minutes. Do not overcrowd the pan. Using tongs, carefully remove the taquitos to a plate lined with paper towels to drain. Continue with the remaining taquitos.
  4. Garnish with your choice of taco toppings.
