Mediterranean Chicken

Sometimes my ideas for exciting new food combinations turns out really well. Many of my dessert ideas have been amazing, like the bar dessert I made with condensed milk and chocolate chips. The cherry glazed pork loin recipe is a family favorite. However, the Mediterranean Chicken breast recipe I made the other night was not a hit.

It goes without saying, but I am still saying it, that I love trying new food. I love a good adventure, but adventure does not always mean success. In fact the definition of adventure is: an unusual and exciting experience. Let’s add the Mediterranean Chicken to the unusual category.

It started as most of my food adventures start, with an ingredient. I had taken chicken breasts out of the freezer for dinner. My initial idea was to grill them. The weather was not cooperative enough to grill. So I had to come up with something else. I looked in the pantry and refrigerator for inspiration.

I had a jar of appetizer olives and tomatoes in the fridge as well as parmesan cheese. Well, if that doesn’t sound like Mediterranean Chicken I don’t know what does. The oil in the olives was already seasoned so I didn’t even need any additional seasoning.

When I brought dinner to the table I was met with three very skeptical looks. Daughter Three immediately pushed all of the olive and tomato mixture off of the chicken. The Hubs just looked at me. “What is it,” he asked. It was quite obvious to me that it was Mediterranean Chicken, but I told him. After a few bites he pushed all of the topping off of his. Daughter Number Four isn’t eating meat currently, but beyond one small bite she was not even eating the topping.

I personally thought the flavors worked nicely together. The idea was great, but the family did not appreciate it the execution at all. I will continue working on using this idea with some of the ingredients and flavors with a different outcome.

Have you ever had a recipe fail or an idea that did not turn out like you thought it would? I would love to know if I’m the only one whose food adventures turn have unusual outcomes.

Mediterranean Chicken Breasts

  • 2 chicken breasts (butterflied)
  • ¼ cup appetizer olives (pitted and diced)
  • Oil from olives
  • ¼ cup Roma tomato (diced)
  • ¼ cup parmesan cheese
  1. Preheat oven to 350 degrees. Line a baking pan with parchment.
  2. Pit and dice olives. Dice tomato and mix with olives.
  3. Place chicken breasts on parchment lined baking sheet. Brush with oil from appetizer olives.
  4. Mound ½ of olive and tomato mixture onto each chicken breast. Grate parmesan cheese over the top. Bake at 350 degrees for 20 minutes, or until the juices run clear.
