Happy New Year! Black and White Cheesecake

Happy New Year! 2011 ended with much eating and cooking at my house!  It was wonderful. One of the highlights was a decadent Black and White Chocolate Cheesecake.

I had a crazy idea to have a black and white themed dinner “party” for New Year’s Eve.  The Hubs and I do not usually attend parties or gatherings for NYE.  We like to spend the last hours of the year with our little ones.  We’d spend it with all of our girls if we could!

I saw a recipe for olive penguins online and wanted to make them.  I had also seen a recipe for a white chocolate cheesecake with a cookie crust (black and white chocolate cheesecake) that I wanted to make.  So with those two ideas I decided that was the theme!

Additionally, I found some squid ink pasta at the local grocery store and The Hubs made a crab bake. That rounded off the meal.  It was all delicious.

Daughter Number Four was a huge help in making the penguins.  She put the carrot noses in all of them and handed me the various sized olives to stuff and assemble.  They turned out better than I had hoped.

She was also a huge help in making the cheesecake.  It was so much easier to make with two people than it would have been by myself.  She crushed the cookies in the food processor and helped me pat the crust into the springform pan.  D4 held the hand mixer while I scraped down the sides and she broke the eggs into the cream cheese / sugar mixture.  The mixing was done by her as well, while I added the melted white chocolate chips.

The Black and White Chocolate Cheesecake looked so good before it went into the oven. We were hardly wait to try it!

After we got done with our part of dinner, we heard The Hubs in the kitchen making his crab dish.  It thrilled me when I heard him ask daughter number three to come help him with the food processor.  She stayed to help him finish it.

I am so glad that my girls like to help in the kitchen.  My hope is for them to have wonderful memories of being in the kitchen cooking with us. I know some of my best memories are helping my parents when I was young.

The dinner was absolutely amazing!  The penguins were as yummy as they were cute, and the pasta was good.  The crab bake was delicious, and I will be asking for it again.  We had to wait a bit longer for the cheesecake, but after it was cooled and we had digested our dinner, I shaved some chocolate curls onto the top and we each had a small piece.  It was simply divine.  I will definitely be making it again.  In fact, I will be making all of our New Year’s Eve treats again.

Black and White Chocolate Cheesecake

CRUST

  • 1 3/4 cups crushed creme-filled chocolate cookies
  • 2 tablespoons butter (melted)

FILLING

  • 1 cup white chocolate chips
  • 3 – 8 ounce packages cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • Semi-Sweet and/or white chocolate baking bars (for curls)
  1. Preheat oven to 350 degrees.  

  2. Combine cookie crumbs and butter in medium bowl. 

  3. Press onto bottom of ungreased 9-inch springform pan. Bake for 10 minutes. 

  4. Microwave white chocolate chips in small, uncovered, microwave-safe bowl on 70% power for 1 minute; stir. If necessary, microwave at additional 10-second intervals, stirring just until chips are melted. Cool to room temperature. 

  5. Beat cream cheese, sugar and vanilla in large bowl with an electric mixer until smooth. Beat in eggs; gradually beat in melted white morsels. Spread over chocolate crust. 

  6. Bake for 40 to 50 minutes or until edges are set but center still moves slightly. 

  7. Cool in pan on wire rack; refrigerate until firm.

  8.  Remove side of springform pan. 

  9. Sprinkle curls over cheesecake before serving.
