No-Knead Artisan Bread
  • 3 cups all-purpose flour plus more for hands, surface, sprinkling
  • 1 ½ cups water
  • 1 teaspoon salt
  • ½ - 1 teaspoon yeast depending on how ‘yeasty’ you want it to taste
  1. Heat water in a microwave proof measuring cup to about 105-110 degrees.
  2. In a large bowl, stir together flour, salt, and yeast. Make a well in the center.
  3. Add the water using a wooden spoon, stir together until mixture forms a shaggy dough.
  4. Cover the dough with plastic wrap and let rise at room temperature for 8-12 hours. Dough will become bubbly and rise.
  5. When dough has risen, preheat oven to 450 degrees.
  6. With floured hands turn dough onto a floured work surface, and form dough into a ball. Do not knead, but fold dough over onto itself. Cover the dough with plastic wrap and let sit for one hour.
  7. After oven has preheated for 30 minutes arrange a rack in the middle of the oven. Place a large Dutch oven with lid on the rack. Preheat for 30 minutes.
  8. Using oven mitts remove Dutch oven and place a piece of parchment into the Dutch oven. With floured hands, gently place bread dough into Dutch oven.
  9. Cover the Dutch oven and bake for 30 minutes. Use caution when covering and transferring to the oven, as the Dutch oven is hot.
  10. Remove the lid, using oven mitts, and continue to bake for 15 minutes, uncovered.
  11. Place the Dutch oven on a wire cooling rack for about 5 minutes. Lift the bread out of the Dutch oven with the parchment to continue cooling.
  12. Cool at least 15 minutes before slicing.
