Mediterranean Chicken Breasts
  • 2 chicken breasts butterflied
  • ¼ cup appetizer olives pitted and diced
  • Oil from olives
  • ¼ cup Roma tomato diced
  • ¼ cup parmesan cheese
  1. Preheat oven to 350 degrees. Line a baking pan with parchment.
  2. Pit and dice olives. Dice tomato and mix with olives.
  3. Place chicken breasts on parchment lined baking sheet. Brush with oil from appetizer olives.
  4. Mound ½ of olive and tomato mixture onto each chicken breast. Grate parmesan cheese over the top. Bake at 350 degrees for 20 minutes, or until the juices run clear.
